Goals Today:

  • Vegan
  • Grain Free / Wheat Free
  • Corn Free
  • Alcohol Free
  • 30 min of Mediation / Yoga  X (no meditation or yoga)
  • Biking – 30 minutes in the snow 🙂

Breakfast

  • Super smoothie (1 cup water, 3 cups spinach, banana, orange, apple, 2 cups pineapple)
  • 1 oz dried fruit and nut mix

Lunch:

  • Tomato – Peanut stew
  • Baked Tofu
  • Edamame with olives and roasted garlic
  • Squash, onion, lentil, and walnut salad

Dinner:

  • Roasted Green Beans ( green beans, portabella’s, almonds, roasted garlic, olive oil)
  • African peanut stew
  • Raspberry Sorbet (1/2 cup coconut milk beverage, 10 oz Raspberries, 1/2 tsp vanilla, 1 tbsp date sugar- blended in vitamix)

Today was good.  I didn’t meet my meditation goal, but did try out my new bike.  I wanted to ride further, but it started to sleet pretty hard and I didn’t want to crash.

Vegan African Peanut Stew

I really like the peanut soup at the co-op so after at looking at some recipes, I decided to concoct my own.

  • 2 yellow onions
  • 2 carrots
  • 1 large sweet potato
  • 6 garlic cloves minced
  • 1/4 tsp cayenne pepper
  • 1-2 tbsp ginger – minced
  • 28 oz can diced tomatoes
  • 32 oz salt free veggie broth
  • 1 cup chunky no salt peanut butter
  • 1/2 tsp ground cloves

Chop the onion, sweet potato and carrots and then water saute’ them until soft.  Add the garlic and ginger and saute for 1-2 more minutes.  Add the veggie broth, cloves, cayenne, and tomatoes and bring to a boil stirring often.  Boil for 5- 10 minutes and then reduce heat to low and stir in the peanut butter.  Cover and let simmer for 30 -40 minutes stirring often.  The stew will get really thick.  You can also puree the soup if you want a creamy texture.
