Lunch Salad

Here is the recipe (if you can call it that) of my daily lunch salad.  It can consist of any or all of the ingredients listed below and I usually just throw together whatever is in the fridge:

  • Romaine
  • Red Onion
  • Carrots
  • Peas
  • Green, Red, and or Orange Bell Pepper
  • 1/2 oz of sunflower seeds, hemp seeds, and or pepitas
  • 1-2 tbsp of raisins
  • Clementine, Orange, Raspberries, blueberries, and or banana
  • Radishes
  • Chick Peas and or Baked Tempeh
  • 1/2 avocado
  • Flavored Vinegar
  • Original Mrs. Dash (no salt)

The fruit is a must as the sweetness offsets the sourness of the vinegar.  Yum, Yum, Yum!

Better Today

Yesterday was a rough day and I really felt detox symptoms.  My food yesterday was great.  Fruit and raw nuts for breakfast,  Romaine salad with beans and Clementines and 14 vegetable soup for  lunch and Vegan Taco Salad for dinner.  I was really hungry after the gym so I had a piece of baked tempeh and a few bites of roasted cauliflower. Yum.

I am still a bit stuffy today, but my skin looks better and my GI issues seem to be gone (I won’t go there 🙂

I decided to do this new thing where I set my calendar alert to go off every hour and then get up from my desk and alternate between 5 minutes of yoga and 5 minutes of stairs.  It feels good to get up and move every hour.

Last night I did the full body workout from iFitness.  I really love it!  So far today I have done 8 minutes of Yoga and 6 minutes of stairs.  I am realizing that due to meetings / tasks it is not always possible to get away right on the hour, but I am doing a lot more than I was throughout the day so that is good.
